Soave

“Soave” wine is the white wine representative of the incredibly prosperous wine territory of Verona (which also includes two other white wine denominations such as Lugana and Bianco di Custoza) and the main white wine of the Veneto region. The wine originates in the municipality of Soave, situated in the extreme eastern part of the province of Verona and bordering with Vicenza, a municipality that, together with Monforte d'Alpone, represents the historic production area, identified and delimited since 1931, when the area was recognised for the production of "Vino Tipico Soave". On the same basis the “Soave Classico” area was delimited in 1968, with the institution of the “DOC” denomination.

The territory of Soave wine is characterized by a very particular area, made up of hills with volcanic, calcareous, tuffaceous and sometimes even clayey soils, ideal for the “Garganega” grape, the true main variety of “Soave” wine, which must be present for at least 70%.

“Garganega” is a grape variety that needs more time to ripen (it usually reaches maturity in October). It is grown in Soave using the traditional Veronese pergola system, which guarantees optimal protection of the grapes both from the sun, especially in hot years, and from adverse conditions such as hail, allowing the individual bunches to be monitored constantly. This vine, which is genetically related to the Sicilian “Grecanico”, produces wines with a fruity, floral and spicy bouquet, sometimes with overtones of almonds.

Thanks to the "Vigna del Soave" zoning project launched by the consortium at the beginning of the year 2000, a complete mapping of the entire area was carried out, from which no less than 33 “crus” emerged, representing all the richness and variety of “Soave” wine. Soave can be presented as “Classico”, if it comes from its historic area, “Superiore DOCG”, “Riserva”, the most aged version of Soave, and also as “Passito”, such as Recioto di Soave.
